How about a simple Asian inspired soup to warm your soul? It’s the perfect soup to whip up in less than 20 minutes and enjoy on a lazy day. I actually got introduced to this recipe the last time I had an upset stomach. It contains very few ingredients, yet it is very soothing. I’ve provided you with the bare bones, or base recipe and you can choose to add more, or even less. For example, both chicken and shrimp would make the soup more hearty and leeks would add great flavor to the simple broth.
Egg drop soup, also often called egg flower soup, originates from China and consists of eggs added to a boiling chicken broth. The eggs cook almost immediately when added to the hot broth and create thin strands in the flavorful liquid. It’s most often simply seasoned with salt and pepper and green onions are often added. Here you can go with the habitual green onions, but I’ve chosen to add chives instead, just to make it a little different. Americans often prepare this soup by adding corn starch to make it thicker, but there is no need to thicken it and I recommend that you enjoy it very liquid, just like the original version of the soup.
Since both eggs and homemade stock are highly nutritious, this soup is a great source of nutrients and minerals. That makes it a perfect soup to enjoy when feeling run down or when dealing with some king of virus. It’s also a very good idea to include highly nutritious foods like egg yolks, bone broth and organ meat in your day to day life. In fact, the focus around a paleo diet is too often only placed on eliminating toxic foods like sugar, vegetable seed oils as well as grains and legumes, but for an absolute optimal health this is rarely enough. Zero-Carb Egg Drop Soup Recipe – Keto Friendly!
If I have to eat one more fried egg… Well, I’ll be fine, but I don’t want to. I love deviled eggs, even scrambled eggs once in a while, but one month into keto and I’m already over eggs as a source of protein.
That is, until I had a craving for chinese food. Knowing good and well that there was nothing healthy I could eat or even pretend to be healthy from a chinese place around here, I remembered my favorite chinese soup – egg drop!
I literally had no idea how to make it, so I winged it and it tasted exactly like the real thing. In fact, it tasted better!
Servings: 2 - Carbs / Sugar: 0
- 2 eggs
- 4 cups of bone broth OR 4 cups of water + 2 large boullion cubes
- A pinch of red pepper flakes
- Freshly ground pepper
- Scramble 2 eggs in a bowl with some fresh pepper and set aside.
- Add bone broth and a pinch of red pepper flakes to a small pot on the stove over high heat.
- Once boiling, slowly stir in the egg mixture and continue to mix until it boils again.
You’re done! I’ve never had such an easy and tasty lunch. If you have scallions, I’m sure they’d make a lovely addition or garnish. I feel like there are always scallions in the ones at the restaurants.
Quick and Easy Low-Carb Egg Drop Soup
Egg drop soup is a traditional dish from Chinese culture. The original recipe is naturally low-carb, however some people suggest adding a starch in to thicken the broth. I find this is completely unnecessary; starch doesn’t add more flavor or nutrition (for a keto dieter). The base of a low-carb egg drop soup is a mixture of three basic ingredients – eggs, broth, and salt. Extra flavors can be imparted from ginger, anise seed, cinnamon, black pepper, chili peppers, scallions or garlic chives. There are many fun things to add in to increase the longevity of this recipe.

This is a warm and surprisingly filling soup that is my answer to a quick meal anytime. Add in as many eggs as you like, there is no limit here so whatever you need to make your macros is fine.
