Leek and Potato Soup

Ingredients

  • 1 tsp Olive Oil
  • 1 Small Onion, Chopped
  • 450g Leeks, Sliced
  • 450g Potatoes, Diced
  • 500ml Semi Skimmed Milk
  • 500ml Water
  • 1 tsp Herb Cubes
  1. Heat the oil and gently fry the onion leeks and potatoes for 3 minutes
  2. Pour in the milk and 500ml water, add the herbs and season with salt and pepper.

Cover with water and let it simmer for 20 minutes. Strain the liquid and remove the leeks, placing them in a bowl. Drink one cup of the soup every two to three hours. Whenever hungry, serve the chopped leeks with extra virgin olive oil and lemon juice, alongside a lean piece of fish or meat. Do this for a few days, and add a few vegetables and fruit to the meal.

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 225g/8oz potatoes, cubed
  • 2 medium leeks,sliced
  • 1.2 litres/2 pints vegetable stock
  • 150ml/5fl oz double cream or crème fraîche
  • salt and freshly ground black pepper

Heat the oil in a large pan and add the onions, potatoes and leeks. Cook for 3-4 minutes until starting to soften.

Add the vegetable stock and bring to the boil. Season well and simmer until the vegetables are tender.

Whizz with a hand blender or in a blender until smooth. Reheat in a clean pan, stir in the cream or crème fraîche, heat through and serve.
