Amazing Vegetable Soup (South Beach Diet)

Ingredients Nutrition

  • 2 quarts chicken broth or 2 quarts vegetable broth
  • 1 small head green cabbage, shredded (I use angel hair shredded cabbage) or 1 (10 ounce) bagshredded cabbage for Coleslaw (I use angel hair shredded cabbage)
  • 1 head celery, washed and sliced
  • 1 leek, rinsed, trimmed, and sliced thinly
  • 5 garlic cloves, peeled and minced
  • 1 cup fresh green beans, cut into 2-inch lengths
  • 1 medium zucchini, cut into 1/4 inch rounds (I leave out)
  • 1 medium summer squash, cut into 1/4 inch rounds (I leave out)
  • 1 (15 ounce) can diced tomatoes, drained
  • 1 (14 1/2 ounce) can navy beans, rinsed and drained (optional)
  • shredded parmesan cheese, optional garnish (optional)
  • basil pesto, optional garnish (optional)

Directions

  1. Combine broth, cabbage, celery, leek, garlic, and green beans in an 8-quart soup pot. Bring to a boil, reduce heat, and simmer until green beans are just tender.
  2. Add tomatoes, zucchini, and squash (and navy beans, if using) and cook an additional 45 minutes.
  3. Serve hot, sprinkled with Parmesan cheese or with a spoonful of pesto stirred in, as desired.

South Beach diet soup recipe suggestions

Pinto Bean Soup Recipe — Phase 2

These quantities are for 7 servings.

  • 1 lb. dried pinto beans
  • 8 cups water
  • 1 medium onion, diced
  • 1 small green bell pepper, diced
  • 1 garlic clove, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon chili powder
  • Вѕ teaspoon salt
  • ВЅ teaspoon dry mustard
  • Вј teaspoon pepper
  • 1 can Rotel

Place beans in a large Dutch oven; add water to two inches above beans. Bring to a boil. Boil one minute; cover, remove from heat, and let stand one hour. Drain.

Bring beans and 8 cups water to a boil. Cover, reduce heat, and simmer one hour or until beans are tender. Add onion, pepper, garlic, Worcestershire sauce, chili powder, salt, dry mustard, and pepper; simmer 30 minutes. Add tomatoes; simmer 30 minutes more.

Chickpea Soup: Phase 1, Phase 2 and Phase 3

  • 1ВЅ cups dry chickpeas
  • 1 cup onion, chopped
  • 1 clove garlic, minced
  • 1 tablespoon Safflower oil (or any allowed oil)
  • 6 cups water (add more if needed during cooking)
  • 2 tablespoons Soy sauce (or less)
  • Вј cup chopped parsley
  • Вј cup chopped peanuts (optional)

Combine chickpeas and enough water to cover; refrigerate overnight. Drain. Cook onion and garlic in oil for 2 minutes, add chickpeas, soy sauce and 6 cups water. Bring to the boil, reduce heat, cover and simmer for about 3 hours. Pour into blender and process until smooth. Reheat and serve with parsley and peanuts.

Spicy Lentil Soup Recipe — Phase 1, Phase 2 and Phase 3

  • 1 tablespoon Oil
  • 1 cup chopped onion
  • Вѕ cup diced green pepper
  • Вѕ cup diced red bell pepper
  • 4 cloves, finely chopped
  • 6 cups water
  • 1 can diced tomatoes
  • 2 cups dried red or green lentils, rinsed and drained
  • 2 tablespoon red wine vinegar
  • 1ВЅ teaspoon cumin
  • 1ВЅ teaspoon salt
  • 1 teaspoon paprika
  • Вј teaspoon red pepper flakes

Heat oil in a dutch oven over medium heat. Add onions, bell peppers and garlic; cook for 2 minutes. Add remaining ingredients (water through red pepper flakes) Bring to a boil. Reduce heat and simmer, partially covered, stirring occasionally, until lentils are tender, about 25 minutes!

Easy to follow classic and comforting egg drop soup recipe. You only need 3 main ingredients; chicken broth, egg and chopped green onion.

Egg Drop Soup (for South Beach Phase 1) - Dietplan-101

Yields: 2 servings

4 cups fat-free chicken broth

4 tbsps chopped green onion

2 tsps soy sauce

  • Lightly beat egg and egg white in a bowl.
  • Pour chicken broth into a saucepan and bring to the boil.
  • Add in chopped green onion and off the heat.
  • Gradually and gently stir in the beaten egg, then add in soy sauce and season to taste with pepper.
  • Serve hot.
