Day 21: 1/23 or Do you eat fish?

Today is a Phase I Day. Not so good on getting all my water in today. Skipped the lemon water, but did have a nice pair of poached eggs for breakfast with some coffee. Had to remind Nathan that it is a Phase I day and that wonderful Harvest Bread Company Dakota multi-grain bread is NOT on today’s plan. He was not happy with me!

Snack: 1 C. frozen mixed fruit with 4 oz. greek yogurt and splenda

Lunch: Large salad with chopped red onion, yellow, red & orange bell peppers, celery. Basalmic vinegar & oil dressing. Loaded on a med. Portion of fresh grilled chicken. I did put some cheddar cheese on the boys salads.

Snack: hot green tea. Hubby and I went to the movies today and boy, did I want popcorn! I was strong and thought about how good I am going to look! Thought about my salmon that we are eating for dinner and it is such a treat that it helped.

Dinner: crab stuffed salmon (from Costco) with asparagus. Can’t say that I have eaten much fish, though this has really been tasty! Jeff had it at a friend’s home one night and came home talking about it. Then another friend served it at dinner for both of us. Yum! This has a crab stuffing in the middle which does have some wheat and sugar listed, but it can’t be much. I decided to only eat it on the heavier calorie days just in case.

Today at lunch we talked about the most difficult things during the first phase.

  • Nathan and Ben said they miss specific food items and started naming them. I had to make them quit!
  • Jeff said his most difficult thing was that he missed eating out with us. It is a form of socializing and entertainment for our family. We’ll dine out again, but not just yet . We are eating at home at each meal now, or preparing it to take to work/school, and I know that has got to be saving us $. Jeff is tracking our budget and can tell us in a month or so what the difference is in our budget. I am spending a lot more on vegetables, fruits and meat and wonder how it is affecting our budget. I try to find deals and shop at Costco and Walmart frequently! I know that by shopping there I save money.
  • I felt the most difficult part was planning the menus, trying to find tasty recipes that would make my whole family eat them, keeping the food interesting. I am really tired of chicken. We haven’t ever eaten much fish, so that hasn’t been high up on the list…but is getting there! The salmon we found at Costco is wonderful so we may try some new fish. I have tried some ground turkey with mixed results. I made the Taco Turkey salad form the 17 Day Diet book and it was great in my opionon, but no one else liked it. I bought some Jennie-O turkey patties at Walmart and cooked them one day for Nathan and I for lunch. Pretty good! I put some salsa on mine and he used pesto. I will do that again!

Time for the salmon to be popped on the oven! Tomorrow is weigh in day. Maybe I will get a wonderful birthday surprise!

2 Tbsp parmesan cheese (fat free if you can find it)

1 tsp onion powder

1 egg or 1/4 cup eggbeaters

1/4 tsp nutmeg, parsley, sage, thyme (or poultry seasoning to replace the parsley/sage/thyme)
