Mediterranean Chicken Casserole

Orzo, Italian cheese, spinach and a hint of oregano give this savory chicken casserole a Mediterranean flair.  Best of all, it's made in one dish, and it's ready in under an hour.

can Campbell's® Condensed Cream of Celery Soup or Campbell's® Condensed 98% Fat Free Cream of Celery Soup

teaspoon dried oregano leaves, crushed

teaspoon ground black pepper

package (10 ounces) frozen spinach, thawed and well-drained

cups cubed boneless, skinless chicken breasts, cooked

cup orzo pasta, cooked and drained

cup shredded Italian cheese blend

How to Make It

Stir the soup, water, oregano, black pepper, spinach, chicken and pasta in a 2-quart shallow baking dish.  Cover the baking dish.

Bake at 375°F. for 30 minutes or until the chicken mixture is hot and bubbling.  Sprinkle with the cheese.

Recipe Tips

  • Tip: You can substitute 3 cans (4.5 ounces each) Swanson® Premium White Chunk Chicken Breast in Water, drained, for the cubed cooked chicken.

A good starter recipe

I read the reviews before I made the casserole. I sauteed garlic, onion, and some mushrooms, and then added the spinach to the pan. I took the "raw" taste off the spinach. I put the orzo in the baking dish first and mixed in a tsp of pesto, then added the chicken, cheese, and vegetables. I baked it for 15 minutes, and stirred it, then added the rest of the cheese on top and baked it until it was bubbly. The results were terrific, and the house smelled good too! As most have said, it is a good recipe to build on, and it is also good to get spinach into a comfort food.

Yummy with seasonings added

I seasoned the chicken with some Italian herbs and seasoning salt, so it was not bland. As leftovers, it was even better! I will definitely make it again.

Flavorful additions needed

Thanks to the advice of other reviews, I made some flavorful additions to this recipe: 1/2 chopped sweet onion (sautéed), 4 cloves minced garlic, 1 can quartered artichoke hearts, 2 T. toasted pine n uts, 3 oz. crumbled feta, and chicken broth instead of water. For the cheese, I used 1/2 c. shredded mozzarella, 1/2 c. shredded Italian blend, and 1/3 c. shredded parmesan. I added half of the cheese into the mixture and sprinkled the other half on top. Next time, I will add chopped roasted red peppers, diced tomatoes, or sundried tomatoes.

My family loved it. I had leftover baked chicken which I cut up, plus I used fresh spinach that I had blanched. I doubled the recipe made 2 casseroles: one for that evening one to save for another n ight. My family enjoyed it so much, the 2nd one never made it to the refrig/freezer.

This classic casserole is convenience cooking to a T, using prepared ingredients like canned soup and sour cream. But one bite, and you'll overlook the prepackaged stuff and go back for seconds.

Chicken Casserole with Campbell's Canned Soup

Ingredients

4 boneless, skinless chicken breasts

Directions

1. Preheat the oven to 350°.

2. In a medium saucepan, cover the chicken breasts with cold, salted water by 1 inch and bring to a low boil over medium-high heat. Simmer the chicken breasts until cooked through, 8 to 10 minutes. Remove the chicken out of the liquid and set aside to cool. Once the chicken is cool enough to handle, shred into small pieces.

3. Meanwhile, bring the cooking liquid back to a boil and cook the egg noodles until slightly underdone, 6 minutes.

4. In a medium bowl, mix together the shredded chicken, noodles, soups and sour cream. Season with salt and pepper. Place the mixture into a lightly greased 11½-by-7½-by-2-inch oblong pan. Crumble the bread over the top of the casserole, then pour the melted butter evenly over the top.

5. Bake until slightly browned on top, 20 minutes. Serve warm.
